So when I decided to share a Thanksgiving recipe with all of you, well what can I say…the opportunities were endless! We are talking about Thanksgiving after all and it’s so hard to pick any one thing since everything is simply delicious.
Naturally, I have a sweet tooth – don’t we all – so I decided to share a dessert recipe. Still, endless options. But, since it is the time of the year we all savor pumpkin flavored anything, cinnamon, nutmeg, you get the point all flavors fall, I decided on Pumpkin Cake!
In addition to the flavor being spot on for the season, this cake is SO easy and I know many of us are stressed for an extra hour in any day. Also, being cake not pie changes things up a bit.

2 C. sugar
1 ½ C. vegetable oil
1 ½ C. canned pumpkin
4 eggs, beaten
2 C. flour
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
Spray a jelly roll pan (12.5” X 17.5”) with cooking spray. You can use a 9 x 13 pan if you don’t have a jelly roll pan, you may need to cook slightly longer. Preheat the oven to 350.
Using a mixer, add the ingredients in the order listed above, mixing thoroughly.
Spread in pan and bake for 20 minutes.
Allow to cool and spread with Cool Whip or Cream Cheese Frosting!!
